用鐵鍋炒豆子,有很多的不定數,加上沒有溫度計的盲炒。自覺得用個很 local 圖個方便,在不添購其他設備的情況下。火力,是目前依然覺得不好控的點。看了不少教學,實際狀況真的還是要自己炒過才知道。一支豆子,要抓到他的特性,至少要炒上個好幾回,才會抓到方向。下一支豆子估計也是要用同樣的方式,整個流程跑過好幾次,才會知道樣貌如何。有的時候忘了計時,一回心浮氣躁,又一回平心靜氣,炒出來的狀態就很不同。
