Burgundy 除了使用 Chardonnay 釀造白酒之外，還有被俗稱「窮人版」Chardonnay 的 Aligoté。近幾年以來也越來越多酒莊推廣之，就跟著這篇筆記來了解 Aligoté 與其他也被使用釀白酒的葡萄品種。

🍇 Aligoté
早在十八世紀的勃根地文獻中就出現 Aligoté，曾經擁有廣大的種植面積。以 Dijon 市長 Canon Félix Kir 命名的 Kir 雞尾酒，就是 Kir 發明將使用 Aligoté 釀造的酸白酒搭配 Crème de Cassis 所調配出來。但在進入十九世紀末與二十世紀初期時逐漸退潮，直到最近勃根地又復興此品種的釀照。Aligoté 目前產區主要集中在 Aligoté 大區 (Generic Bourgogne Aligoteé) 以及新成立的法定產區 Bouzeron，但 Domaine PonSot 酒莊在 Morey-St-Denis 一級園地塊 Les Monts Luisants 也有使用老種 Aligoté 來釀造酒款。Aligoté 有三種常見的品種，Domaine de Villaine 酒莊的主理人 Pierre de Benoist 堅持使用最古老的品種 Aligoté Doré，因為其果實成熟度比較突出。Aligoté 的成熟期遠遠早於 Chardonnay，雖然可以早飲但具有不錯的陳年實力。Jasper Morris 認為 Pernand-Vergelesses 周遭的 Aligoté，陳年後可以媲美 Corton-Charlemagne。

隸屬於 Pinot 家族的白葡萄品種，Domain Gouges 酒莊在 Nuits-St-Georges 的白酒起源至此葡萄品種。

🥂Pinot Gris
十六世紀人們喜歡將 Pinot Gris 與 Pinot Noir 混釀打造出輕盈、草莓色的酒款。根據 1831 年 Dr. Morelot 的文獻，Chamoblle-Musigny 令人著迷的細緻感乃是使用 10%~12% 的 Pinot Gris 混釀。如今，還是有些釀酒師會在 Pinot Noir 園中種植 1~2% 的 Pinot Gris 來增加香氣的複雜度。

此品種為白葡萄版的 "Gamy" 在以抗寒著名，目前有少數釀酒師在使用此品種，主要集中在 Vézelay。

理論上目前主要種植在 Auxerroris，常作為釀造氣泡酒的基酒。Dmaines Edmond Chalmeau 與 Gueugen 都有使用在 1960 年種植的 Sacy 釀造 Coteaux Bourguignons Sacy cuvée。
上述 Aligoté、Melon 與 Sacy 的屬於 Pinot Noir 與 Gouais 的後代。
