蔥絲=青「蔥」+乳酪「絲」
室溫養護酵種的頭一日,如往常順利成長2倍甚至以上。未料翌日晨起回落後便一蹶不振,突然間,即使如何反覆取出部分再添加水粉餵養,就是未有任何起色,大小氣泡皆說好似的按兵不動。
也許是減半酵種餵養,活力削弱,以致1229當日早晨回落後即使持續餵養,卻未見絲毫成長。也許是Elaine提及的,When the starter suddenly stopped doing anything~the starter would go through a quiet phrase. And then come back again.
既然如此,也以不動聲色回應,除了持續餵養,同時嘗試運用剩餘酵種於各式各樣的蒸焙食上,如今日的蔥絲野酵疊酥。
