Take a half dozen tomatoes that are mature and put them over the coals and turn them until they are charred, then carefully peel off the skin. Cut them up finely with a knife, and add onions finely cut up, at your discretion, finely chopped peppers, a small quantity of thyme or pepperwort. Mix everything together and add a bit of salt, oil and vinegar. It will be a very tasty sauce for boiled meats or whatever.

至18世紀,意大利人開始對番茄改觀,知道它有營養價值,就更願意將它入饌。拿坡里廚師Francesco Leonardi在1790年出版的食譜L'Apicio Moderno (The Modern Apicius) 首度教煮紅醬意粉。1807年,法國的Alexandre Balthazar Laurent Grimod de La Reyniére——歷史上第一位餐廳評論的作者,推薦了用紅醬煮意粉,形容:番茄汁帶來宜人的醬汁,令人上癮。
不過要直至19世紀,番茄才成為意大利的「國民食材」。當時人們希望擺脫被殖民歷史,民族主義在意大利抬頭,迫切將國家與法國和奧地利區分開來。意大利的國旗有紅、白、綠三種顏色,人們會刻意煮出包含這三種顏色的菜色,如番茄羅勒意粉(spaghetti al pomodoro)、拿坡里薄餅、番茄水牛芝士沙律。紅醬因而「老是常出現」。

拿波里著名美食家、廚師、作家Ippolito Cavalcant先後出版了Cucina teorico-pratics(1837)和Cucina Casareccia in Dialetto Napoletano(1839)兩本書,前者關於貴族餐飲,後者關於住家飯。值得留意的,是紅醬意粉跨越了階級界線——兩本書均有提及。不過,在後者的頻率較高,反映始終平民吃得比較多。這對紅醬之後在全球普及也有影響,因為後來移民到美國的意大利人多是低下階層,也就把紅醬帶到美國。幾年後,1847年,紅醬意粉已出現在美國食譜;至1880年,紅醬和意粉已是既定的配搭。
